1 Cup Vegetable Oil
2 Teaspoons Vanilla Extract

3/4 Cup Baker's Shredded Coconut
1 Cup Rice Krispies
1 Cup Rolled Oats

1 Teaspoon Baking Soda
1 Teaspoon Salt
3 1/2 Cups Flour

3/4 Cups Semisweet Chocolate Chips

1. Beat together butter, sugars, and vanilla until smooth.
2. Gently beat in egg until Incorporated.
3. Stir in oil.
4. Stir in coconut, Rice Krispies, and Oats.
5. In a separate bowl, mix together baking soda, salt and flour.
6. Beat flour mixture into wet mixture one cup at a time.
7. Stir in chocolate chips.
8. Scoop cookie dough using a cookie scoop or roll into 1 inch balls.
9. Freeze dough for a minimum of one hour.
10. Bake at 325 degrees for 16 minutes. Just until edges are golden brown.
11. IMPORTANT. Let the cookies "rest" on the cookie sheet before transferring them anywhere to cool. They are very crumbly and fall apart when warm. They need about 10 minutes to solidify before they are pestered.

Snickerdoodle Recipe

1 Cup Unsalted Butter
1.5 Cups Sugar
2 Teaspoons Vanilla Extract
2 Eggs
3 Cups Flour
1/2 Teaspoon Salt
1/2 Teaspoon Baking Soda
1/2 Teaspoon Cream of Tartar

1. Beat butter, sugar and vanilla together until smooth.
2. Beat eggs in gently until incorporated.
3. In a separate bowl, stir together dry ingredients.
4. Mix dry ingredients into the wet, 1 cup at a time.
5. Scoop with cookie scoop or roll into 1 inch balls.
6. Freeze dough for a minimum of one hour.
7. Roll in cinnamon sugar. I don't have exact measurements for this. Probably about one cup of sugar to a half teaspoon cinnamon. Sugar should just have brown specks visible in it. Careful not to over-cinnamon.
8. Bake at 350 degrees for 16-18 minutes. Until edges are just golden brown.
